Our
twelve-foot model has the smoking/barbecuing capacity to handle
twice the food of our six-foot smoker! That's up to 144 slabs
of ribs*, 60 10-12 pound whole briskets, 64 8 pound Boston
butts, or 108 whole chickens.
Amounts
based upon:
*Two and down St. Louis Style Ribs, with use of rib racks
with three slabs per rack
Eleven pound whole briskets — based on case average
Eight pound Boston butts — based on case average
Three pound whole chickens — based on case of sixteen
chickens, and case weight of forty-eight pounds.
All
measurements were taken at the August 15-16, 2003 Madison,
Indiana "Ribberfest", a Kansas City Barbecue Society
contest.
