I
am really enjoying my new smoker. I cooked 450# of pork
loin for a Man to Man Conference at the Victoria Community
Center in August. I think the pit was the center of attention
of the conference. On Labor Day I cooked brisket and sausage
for 200 evacuees from hurricane Katrina for the local
Jaycee chapter. We had to evacuate ourselves this past
weekend. My wife took clothes, pictures, glassware, etc.
and I took my pit (they said take anything that was important).
I am attaching a copy of a picture I took when I was cooking
the pork loin. |

here is a shot of our trailer, thaught you might like
to see a better picture. Also I love the small smoker.
If you have a chance check out our new web site. It is
still under construction, but you can get the idea. I
have not forgot your Chubby Bubby's Smokehouse Salsa,
we still have not received it from the bottler, he had
some kind of problem getting my jars. I will get it to
you when it comes. I am sure you are busy too, but we
are finding ourselves in Columbus Ind. the last couple
of weeks, we did an art festival last weekend, and we
are going back over the 4th. of July. to do a thing at
Ceraland, in Columbus. |
Last
weekend at the art festival, the health inspector
was a cool guy,who liked what we were doing, and also
liked the trailer a lot, he has hooked us up with
the guy at Ceraland, and it sounds like a cool day,
ending up with fireworks that night. "

"I
have about 96 hours of cook time in so far with our grill.
We are fatting-up the neighbors and loving every minute
of it. Connie & I did the Oldham County BBQ contest
this past weekend & had a blast. Our pulled pork actually
got us an 8th place ribbon & enough cash to fill-up
the Toyota with gas. You would have thought we won a million
dollars-it as least felt that good to us. |

120%. Only real problem we had at the contest was all
the people coming into our area wanting to look &
learn about the grill. Everyone was wild about it. We
even had a lot of the Pro's coming over telling us how

have been barbecuing and grilling all kinds of meat for
better than 30 years. I now have the flavor that I have
been looking for all of that time. Subtle sweet wood smoked
flavor, not a bitter flavor that some pits can produce.
On long smokes such as brisket or shoulder, I can even
get a few hours sleep, because of the huge firebox, the
rotisserie shelves, the moisture feature, and the even
temperature throughout the pit."

After several months of research we decided your smoker best
met our needs and budget.
I prepared ribs and chicken for our annual Christmas party
for the employees and it was a huge success. The owners of
our company travel extensively and have eaten in some of the
best 'BBQ Joints' in the country. They have never rated a
'TEN' to anyone, and they rated this BBQ a nine. I am a fairly
good cook but not that good. Your smoker was the main reason

bought a 4ft model a couple of months ago and we have nothing
but great things to say about it. It gets worked hard every
week because its cooking 4 days between 12-14 hours each day
and so far we not had any trouble. As far as temp control
its like any other cooker you might purchase. You have to
spend time with it and learn what it likes as far as wood/charcoal
combinations. My only gripe is that I should have bought an
8ft to start with."
